Simple ingredients you probably already have: • 500 g 00 flour • 325 ml warm water • 1 ½ tsp yeast • 2 tsp salt • 1 Tbsp olive oil • ½ tsp sugar

Add flour & salt. Pour yeast mix + olive oil. Knead 10 minutes until smooth, elastic & springy.

Let dough rise for 1-2 hrs, or slow ferment 12-24 hrs in fridge for deeper flavor.

Divide dough into balls. Let rest 30 mins. Poke it gently — springs back = ready to stretch.
